Soya lecithin is an amphiphilic fatty substance extracted from soybeans. It has applications in the paint industry as a rust inhibitor, colour intensifier, and as a wetting agent. Due to its emulsifying and stabilising properties, it is also used in the pharmaceutical and food industries.
