Avocado is a major tropical fruit with various known health benefits when consumed as part of a balanced diet. Its high lipid fraction in particular contains phytosterols, tocopherols, and most notably omega fatty acids. This application note looks to profile the fatty acid content, using gas chromatography following derivatization into fatty acid methyl esters.
