With consumers more interested than ever in information about food, it is important that companies involved in food production can keep track of food production – from the origin of raw ingredients and the properties of the product, to where the final products end up. In this interview Petter Olsen, Senior Scientist at the Norwegian Institute of Food, Fisheries and Aquaculture Research (Nofima) explains the importance of information logistics within the field of food traceability and how processes can be implemented by both small and large businesses.
