Determination of Ascorbic Acid (Vitamin C) and Its Compounds

Ascorbic acid is found in many food products, either as natural vitamin C or as antioxidant. One simple and easy way to determine it is titration. This application bulletin presents potentiometric and photometric determination of ascorbic acid using 2,6-dichloroindophenol, as well as iodometric and polarographic approaches.
