The reported health benefits of Kombucha, a fermented tea drink, are partly attributed to the organic acids such as gluconate and lactate acid. Ion chromatography was the technique of choice to separate organic acids with inorganic anions with high sensitivity whilst minimalizing interference from sugars and phenols. The study used the Thermo Scientific™ Dionex™ IonPac™ AS11 and AS19 IC Columns.
