Particle morphology of wheat flour and gluten-free flour

In this application note, Malvern Panalytical utilizes morphologically-directed raman spectroscopy (MDRS), via the Morphologi 4-ID, to characterize starch and protein particles of three flour products. This technique allows particles to be differentiated by their chemical identity and subsequently characterized by size and shape.
