Accelerated Shelf-life Testing of Natural Colors in Model Food Systems

In this application note accelerated shelf-life testing (ASLT) using BINDER constant climate chambers is presented as an indirect method of measuring and testing natural color stability in products, such as juice-based drinks and gelatin jellies. Controlled conditions can be used to increase the rate of degradation that occurs under normal storage conditions, accurately predicting natural color stability.
