4-methylimidazole (4-MEI) is formed as a byproduct in some foods and beverages such as colas, beers, soy sauces, breads and coffee. There has been an increase in concern lately about 4-MEI being a suspected carcinogen, this has led to regulations being put in place on the amount allowed in foods. This application note details a simple method to analyze levels of 4-Methylimidzaole using Automated Solid Phase Extraction.
