Ground-breaking research on cooking emissions and their indoor air quality impacts using SIFT-MS

15 May 2026

This application note highlights the use of selected ion flow tube mass spectrometry (SIFT‑MS) for real‑time analysis of volatile organic compounds (VOCs) emitted during cooking. The study quantified 39 VOCs across common meal types, demonstrating distinct emission profiles and their contribution to indoor air pollution.

By enabling high‑sensitivity, broad‑spectrum detection of chemically diverse compounds, discover how SIFT‑MS supports detailed investigation of emission dynamics and secondary pollutant formation. The results provide valuable insights into how cooking practices impact indoor air quality and emphasize the importance of ventilation and exposure mitigation strategies.
