N/Protein Determination in Yogurt According to the Dumas Combustion Method

Among dairy foods, yogurt is one of the most popular and consumed product in the world. Its composition is peculiar: in fact, it’s nutritionally rich in protein, calcium, riboflavin, vitamin B6 and vitamin B12. This application note demonstrates a method for protein determination in plain yogurt using the Dumas combustion method.
