N/Protein Determination in Pasta According to the Dumas Combustion Method

The dumas method is used to determine the molecular weight of an unknown substance. Pasta is a common food product, usually made from durum wheat flour though other grains are used. For nutritional purposes correct labeling on food is important and can impact health, for example coeliac sufferers, therefore it is also important knowing the amount of different components. This application note describes a study analyzing the protein content in durum wheat pasta using the dumas method and comparing it to the content listed on the label.
