Viscosity Application Note: Chocolate

Chocolate is used to make a wide variety of desserts and treats including candies, icings, pastry fillings and desserts, to name a few. This application note details a method to test the viscosity of chocolate, using the Brookfield HADVIII Ultra Rheometer (current model HADV3T) with SC4-27 hanging link spindle.
