This application note offers a new approach to understanding the dynamics of a mixture of complex materials using HPLC coupled with coulometric array detection. The coulometric array allows selectivity and the ability to focus on non-volatile phenols, flavonoids and related compounds. As a result, compounds directly responsible for taste are selected for analysis.
