QA/QC of Flours Using the Agilent Cary 630 ATR-FTIR Analyzer

Food grains are milled to get flours, which can be used in the manufacture of an enormous variety of products such as pasta and bakery products. Ideally, all raw ingredients should be authenticated in order to ensure consistent quality standards and regulatory labeling requirements are met. Flours are tested to ensure bulk shipments correspond with shipping ledgers and that the product meets requirements of the formulator. This application note illustrates how the Agilent Cary 630 ATR-FTIR Analyzer can be configured to rapidly produce high quality spectra and provide a robust method to differentiate between different flours.
