Fast, Effective Evaluation of Edible Bird Nests using Handheld FTIR

This application note provides a simple method for the authentication of edible bird nests, the identification of adulterants and food safety using handheld Fourier transform infrared (FTIR) spectroscopy. IR spectroscopy measures the covalent chemical bonds, creating a molecular ‘fingerprint’ of the chemicals present.
