In this video Evangelina Komitopoulou, Head of Food Safety at Leatherhead Food Research, describes a project involving the systematic evaluation of the survival and heat resistance of specific foodborne pathogens in low moisture foods. The work is to be carried out in the new Pathogen Pilot Plant facility at Leatherhead Food Research and aims to determine the processing conditions required to ensure a safe end product when dealing with dry matrices.
