Poster Presentation: Correlation of Sensory and Instrumental Methods for Shelf-Life Measurement

25 September 2012

In this video Antoine Goupil de Bouillé from Leatherhead Food Research, describes how sensorial changes occurring during shelf-life were correlated with instrumental techniques in order to identify specific markers for product failure and shelf-life prediction. Antoine presents data for both real time shelf-life testing and accelerated shelf-life testing. Interview filmed by SelectScience at the Leatherhead Food Research Food Innovation Day 2012.
